It’s Fall, and in Fall we infuse pumpkin into the air, our room decor and most importantly — our food!
Pumpkin S’mores Cookies
These pumpkin s’mores cookies are so good, they’ll be hard to keep around. Luckily, they are super easy to make! With each crispy-gooey-marshmallow melted-chocolatey-bite, these fall pumpkin s’mores cookies will quickly become the season’s new staple dessert.

We love these cookies so much, we’ve tried a few different recipes but these are our favorites:
- 1/4 cup Almond flour or All-purpose flour
- 1/2 tsp. Baking soda
- 1/2 cup unsweetened almond butter
- 1/2 cup Coconut sugar or Brown sugar
- 1 egg
- 1/4 cup Pumpkin puree
- 1 tsp. Vanilla extract
- 1/4 tsp. salt
- 1/2 cup chocolate chunks
- 1/2 cup Mini marshmallows
- Graham crackers (optional)
Preheat oven to 375 degrees
Mix almond butter, brown/coconut sugar, pumpkin puree, vanilla and egg. In a separate bowl mix almond flour, pumpkin pie spice, baking soda and salt.
Add the dry ingredients to the wet and mix.
Place 2-3 marshmallows into your cookie scoop and then scoop up the cookie batter.
Sprinkle extra chocolate chips or chunks on each cookie if desired.
Bake for 10-12 minutes. Remove from oven, and eat!
