Cherry Almond Cookies with White Chocolate Chips
You will need the following ingredients:
- 2 eggs
- 2 ¼ cups of all – purpose flour
- 1 teaspoon of baking soda
- ¾ cup of brown sugar
- ¾ cup of white sugar
- ½ teaspoon of almond extract
- 1 teaspoon of vanilla extract
- 1 cup of butter
- 1 ½ cups of dried tart cherries
- 1 cup of slivered, toasted almonds
- 1-10 oz bag of white chocolate chips
Preparation time for these cookies is 20 minutes, with approximately 15 minutes of baking time. This recipe serves roughly 5 dozen cookies, or around 60 cookies.
Begin by preheating the oven to 375 degrees Fahrenheit (190° C). Then, in a large bowl, mix the butter, eggs, vanilla extract, almond extract, brown sugar, and white sugar. Blend the ingredients on medium speed using an electric mixer until thoroughly combined.
Next, in a separate bowl mix the flour and baking soda. Slowly add the combination to the butter mixture, mixing until all is completely blended. Then stir in the white chocolate chips, almonds and cherries.
Using a teaspoon, place separate teaspoonfuls of the cookie dough onto ungreased baking sheets. Place the baking sheets into the pre-heated oven and bake for 12-15 minutes.
When the cookies are done baking, remove them from the oven to cool. After cooling, place them on a serving tray or plate, and enjoy!
