Pizza Toast

Via Simply Delicious

Not that this is technically a new idea. My mom used to make a version of this pizza toast for us when we were kids and she had to conjure up something delicious with minimal fuss. She used to toast the bread (just like we have here) and then top it with the canned tomato and onion mix and handfuls of grated cheddar. I’ve refined a little more and gone a more pizza-inspired route.

Esquites (Mexican Corn Salad) Avocado Toast

Via Closet Cooking

Avocado toast is so simple and oh so good but really it’s just a start and I always enjoy adding extra flavour! One of my favourite summer dishes is esquites (Mexican corn salad) with charred corn, mayo, lime juice and crumbled cheese! There is just something magical about the sweet charred corn, creamy mayo and tangy lime juice combo that tingles my taste buds and add a dusting of chili powder to that and my mouth is in heaven!

Roasted Pineapple Whipped Ricotta Toast with Sea Salt

Not only could this also be breakfast or a snack, but I’m also fairly obsessed with the idea of serving it on tiny crostini as an appetizer at a party. How freaking cute would that be?

Dessert

Rainbow Toast

Would you believe these vibrant colors are actually made with all natural ingredients? You can color cream cheese with things like beet juice or turmeric root, then spread it on the toast in a beautiful rainbow pattern.

Healthy Rainbow Toast

That’s right; mermaid toast is officially a thing. No, you’re not dreaming. Yes, it’s edible, and yes, it’s actually healthy! Adeline’s aquatic creations are made by mixing blue green algae powder, a nutrient-dense superfood, with homemade almond milk cream cheese — yum! The finishing touch that makes these toasts even more Instagram-worthy? A sprinkling of edible golden flakes for an extra magical feel, as if the gorgeous blue-green hues weren’t already dreamy enough.
